Since I was home today I thought I would bake some muffins. Got a bit creative and adapted a recipe to what I had at home.The muffins originally were lemon and blueberry but I turned it into banana, lemon and honey muffins.They were light inside,with a crunch top which was great. When I created this recipe I simply chucked in what I thought might go together and they turned out pretty good thanks to a great base recipe from Lovely Little Kitchen .
- 3 cups Self-Rising Flour
- 1 cup Vegetable Oil
- 1 & 1/4 cups sugar
- 1 cup Yogurt (Greek or plain)
- 2 Large Eggs
- Zest of one Lemon Zest
- 2 Tablespoons Lemon Juice
- 2 Medium Ripe Bananas (Mashed)
- 3 Tablespoons Honey
- 1 cup Rolled Oats
Optional: Berries or Nuts
Crunchy Topping
- 5 tablespoons cold cubed butter
- 3/4 cup flour
- 1/2 cup sugar
- 5 tablespoons cold cubed butter
- 3/4 cup flour
- 1/2 cup sugar
Method
- Pre-heat the oven to 210°C fan- forced and grease or line a muffin tray with cupcake liners.
- Make the crunchy topping : place the flour,sugar and cold butter into a medium bowl. Then using a pastry cutter or a fork, mix the ingredients until they form small crumbs of flour coated butter.
- Measure out the flour into a bowl.
- In a bowl of an electric mixer fitted with a paddle attachment, place the sugar,oil and eggs , mixing until it is smooth.
- In another bowl mix the yogurt,lemon zest,lemon juice, mashed banana and honey then add to the egg mixture and blend until well combined.
- Slowly add the flour into the mixture until it is incorporated.
- Fold in the oats (and the optional berries and nuts)
- Fill the muffin tray 3/4 full and sprinkle 1-2 tablespoons of the crunchy topping on top.
- Bake for 3 minutes and then reduce the oven to 160°C and bake for 18- 23 minutes until the muffins have a golden top and spring back at the touch.
- Take the muffins out of the tin.
- Serve warm or allow to cool.
Tips & Notes
*Add berries such as blueberries, raspberries. or nuts such as pecans,walnuts or almond chopped or dried fruit chopped up.
