Banana Lemon & Honey Muffins
The muffins originally were lemon and blueberry but I turned it into banana, lemon and honey muffins. They were light inside, with a crunch top which was great. When I created this recipe I simply chucked in what I thought might go together and they turned out pretty good.....

Orange-Lemon Olive Oil Cake
This Orange-Lemon Olive Oil Cake was originally just orange but since I ran out of oranges I added lemon. The combination turned out great and I always enjoy mixing citrus flavors because it gives you something different. The cake is a large recipe and will serve about 12-14 people generously . It is quite tall and has a light crumb and a dense flavor. When I served this, it was gone very quickly and everyone seemed to love ......

Cake Bites
Made with plain flour these cake bites are slightly dense and crumbly. Perfect base to add what ever you like. In this batch I added a seed mix which had sunflower and pepitas seeds. The seeds added a bit of crunch and texture but also I enjoy the taste. In the original recipe she added dried chopped up fruit, but feel free to play around with different ingredients until you get the perfect .....

Toffee Frosting
This is a new recipe I found. It's a toffee flavor frosting, pretty simple but great with cupcakes that are plain or caramel flavored. The frosting takes about 35 mins to make which is perfect while your cake/cupcakes are cooling. You an pipe it or just use a spatula giving you more of a rustic look.

Lemon Olive Cake
It's one of the best lemon olive cakes I've tried. The cake is very light and has a soft, crumbly texture. I would recommend using a high quality olive oil, if you can afford it,but I use a standard brand which still tastes great. The amount of lemon in the recipe adds an amazing citrus flavor

Light Vanilla Cupcake 1
This is my go to recipe for vanilla cupcakes. This one is from Glorious Treats who had done all the hard work to create this recipe. The reason I love it is because its a great light cupcake ,giving you the "perfect texture" that a box mix gives you but with the homemade taste. The recipe can be made using a whisk or stand mixer making the cupcake a fast, easy worthwhile recipe.

Vanilla Cupcake 2
Vanilla Cupcake 2 is very different from the first recipe. This recipe has more of a rich taste and thicker crumb. Personally I use this recipe for the more special occasion, simply because of the texture but both cupcake recipe are perfect for any occasion. Using butter rather then oil is what gives this cupcake that rich buttery flavor rather then the light texture

Lemon Tart
Lemon tart is a classic recipe, with a million types of shortcrust pastry and lemon fillings, so far this combination is the one I like the most ,but feel free to substitute things for your own loved recipes. Using shortcrust pastry that doesn't require a food processor( which I hate to clean), instead you can use a stand mixer..

Swiss Butter Cream
This is an amazing Swiss Butter Cream recipe, I use this for almost all my important cakes. Unfortunately I didn't created it , all the credit goes to the Crumb Boss (Gretchen Price). I prefer using this over an american butter cream because its lighter , not extremely sweet and loved by all.
